Learn how to make bacon-wrapped smokies.

They are great as part of a breakfast buffet, for tailgating snacks, or on aSouthern charcuterie board.

What Are Smokies?

To make them ahead, assemble the bacon-wrapped smokies as directed.

Wrap tightly or transfer to an airtight container, and store in the refrigerator for up to 24 hours.

Line a sheet pan with foil or parchment paper.

Arrange an oven-safe wire rack inside the pan; coat rack with cooking spray.

Arrange wrapped smokies on prepared wire rack.

Bake at 400F for 30 minutes or until bacon is browned and crisp on top.

Brush sausage bites with barbecue sauce:

Remove pan from oven (keep oven on).

Turn smokies over so the less-cooked bacon side is on top.

Brush barbecue sauce generously over smokies.

Bake until bacon is crisped and bacon is slightly caramelized, about 15 minutes.

Serve warm or at room temperature.
